01 - 4 large eggs, room temperature
02 - ½ cup plus 2 tablespoons granulated sugar
03 - 1 cup sifted all-purpose flour
04 - 1 teaspoon pure vanilla extract (optional)
# How-To Steps:
01 - Preheat oven to 350°F. Grease and line the bottom of an 8-inch round cake pan with parchment paper.
02 - Using an electric mixer, beat eggs on high speed for 5 to 7 minutes until thick, pale, and tripled in volume.
03 - Gradually add granulated sugar while continuing to beat until the mixture is glossy and forms ribbons.
04 - Gently fold sifted all-purpose flour in three additions using a spatula, being careful not to deflate the batter. Fold in vanilla extract with the last addition if using.
05 - Pour batter into prepared pan and smooth the surface evenly.
06 - Bake for 22 to 25 minutes until golden and a toothpick inserted in the center comes out clean.
07 - Allow cake to cool in pan for 5 minutes, then run a knife around the edge and invert onto a wire rack to cool completely.
